why have all the london clubs established themselves in the west?

I would say money because East London is poor compared to the west. East London due to it's economic and social situation has less interest in rugby and then you end up in the county of Essex further east. Which as a county get a pretty bad press in most parts of England and is the basis of numerous jokes.

It's more to do with tradition really. That's where a lot of big clubs started, that's were they could find fields, that's where they've stayed. To a certain extent, professionalism distorted the map - Blackheath used to be big, Saracens used to be a NE London club - but there's always been a weighting there.
