Why must the position be filled with the tallest other than being the jumper in a line-out? What other advantages does it has?
 
I think it's because you get the biggest push with one extension of the legs.

Well...the tallest is usually the jumper in the lineout - as you can lift a man who is 2.1m tall, higher than a man who is 1.8m tall. Naturally being tall also means you are likely to be heavier, stronger and as jonny24 mentions get more push than a smaller player, so to have them push behind the props in the scrum makes sense..
