impossible to change keyboard controls on the pc. you might be able to change gamepad controls if you have a logitech one that either came with software or you can download off the net to edit the buttons outside of the game. logitech profiler is what you are after. apparently if you don't have a logitech controller you can edit the registery to think that is does and then use the loigtech profiler program to change the buttons.
as for 2 franchises on pc i think it might be possible if you move the currently saved franchise to a new folder and then start a new one. not sure on this but just try and experiment and make sure you back up your saved franchise first before tinkering
