I don't feel like graphics made a huge amount of difference to me, anything mid 2000s onwards looks plenty good enough for me. If anything I've been surprised that the advance in graphics hasn't been greater in the intervening period; law of deminishing returns I guess. That said, Witcher 3 is the most recent game I've tried, so there are more advances to come that I've not experienced yet. My biggest complaint about older games is them feeling very 2d in terms of where your character can get to. Obviously this isn't something I could level at the AC games. I enjoyed the first game, but agree that it's pretty repetitive. Not helped by the fact that I'm a completionist. I didn't go as far as collecting all the flags though, and have no plans to snare all the feathers in AC2. I also enjoyed Portal 2. I regret skipping the original, but was impatient having read the rave reviews. I might play it once I finish AC2. Either I was very bad at Portal 2, or others lie about their completion times and / or use walkthroughs. Wanting to do it under my own steam made it a bit frustrating at times.
