Need help/advise to create my own rooster...

Hi guys!

I need your advise in order to create my own rooster by edting profiles in xml...
Could you help me for a few questions please?

1) What is the better way to do that? What are the best software to be used to?

2) Some of the feature don't mean anything for me...like "dwSomething"/"dwCountry"/"dwEthnicity"/"dwWord0"/"byte0"/"byte2"/"Alias".
Can someone tell me what it mean or what it refer?
