I followed this recently, found some Octopus's in Costco and thought id give it a try, and was a good reason to use the Canallleni beans ive had in the cupboard for months.

It was ok, didnt blow my mind, but im not a great cook.

Next time I'm going to follow the same recipe but add some spice, I think thats what it was missing, but then could very well have been my lack of ability

I've never tried octopus, probably should at some point but it's just never been one of those things that has been high on the "must try" list. Then again, neither was kangaroo until I had a kangaroo burger.

Octopus is really nice but the only times I’ve had it have been in nice restaurants in Spain. Never cooked it myself. Proper good though when done right.

The only thing that makes me feel bad is octopuses are really intelligent. I watched that octopus documentary not long ago and made me think twice.

But then having said that pigs are really intelligent (in different ways) but hasn’t stopped me eating them.

Yeah, there's a distinct possibility that they're more intelligent than we are.
Pigs are intelligent, but on a very different scale from octopodes.
Octopodes are self aware, and intelligent enough to use tools (not unique, a few chimps and corvids also can) and allegedly have a rudimentary art that isn't just a mating display - which (as far as I'm aware) is unique outside of humans. None of which applies to anything I'd eat.

There is a guy on YouTube who tests his octopus regularly, opening jars, using utensils etc

Apparently their personalities are incredibly varied too...
